Easy Chicken Recipes For Busy Mums

When you've been busy working all day, coming home and cooking a family meal can be challenging. Not only does the meal have to appeal to everyone, but it needs to be quick, easy-to-make and satisfying. If you aren't sure what to cook tonight, take a look at these delicious and easy to follow chicken recipes and discover a new favourite meal tonight.

 

1. Creamy chicken pasta

Sure to be a hit with the kids,
quick chicken recipes like this scrumptious pasta dish make a great weekly staple. Simply cook and drain some pasta before taking out three large boneless skinless chicken thighs and cutting the meat in to strips. Cook for 3-4 minutes in olive oil, adding 5 chopped rashers of bacon until all the meat is browned. Add a clove of garlic and cook for a further minute before stirring through 300ml of double cream and serving with basil garnish.



2. Spicy chicken and chips

Grab a pack of chicken thighs and dip each piece in a bowl containing one and half teaspoons of salt, one and a half cups of flour and half a teaspoon of cayenne pepper. If your little ones prefer things mild, simply reduce the amount of cayenne pepper you use. After an initial dusting, dip the chicken pieces in one cup of buttermilk and roll once again through mixture. Cook in four inches of vegetable oil using tongs and fry for twenty minutes until golden brown.  Leave to drain on kitchen towels. Serve with a delicious salad or a hearty side.

3. Lemon chicken


This one pot delicious dish gets bonus points for how easy it is to make. Preheat your oven to 200C and make a lemon butter with the juice from two lemons, 50g of butter, three tablespoons of honey, four rosemary springs and a finely chopped garlic clove heated in a pan.  Pop eight chicken drumsticks in a roasting tin and add 750g of peeled, diced potatoes and drizzle with the juice. Roast for an hour until the chicken is golden brown. Try more unusual recipes like this one alongside a golden bowl of chips as this will encourage your kids to try something a bit outside of their comfort zone.
